The Russian table has always been famous for its abundance. And you won’t find such magnificent pies like ours! The list of original Russian dishes includes pies of various shapes and consistencies. The variety of fillings is also surprising: fish, meat, vegetable, fruit, potato and, of course, berry. It is not for nothing that the Russian proverb says: “Everything can be wrapped in a pie”. In our article today, we wrap blueberries in it.

Blueberries have a lot of advantages, it is tasty and incredibly healthy. It has long been proven that blueberries are a biogenic stimulant: they cleanse the body of toxins, significantly reduce blood sugar and have a beneficial effect on the visual system. Therefore, blueberry pies, which have retained practically all the useful properties of fresh berries, are a great way not only to follow a healthy lifestyle, but to improve your health to what extent.

Also good are products with priceless fruits, cooked according to the cheesecake principle, which, in addition to blueberries, contain unsalted cream cheese or fat cottage cheese and are almost entirely composed of toppings.

Blueberry pies are made closed, half-closed (trellised) or open, large or small, rectangular, triangular or round, and regardless of the chosen shape, they will always delight the sweet tooth with its original taste and aromatic smell. If you decide to bake a juicy blueberry pie, of course, you should first purchase it, clean it of unnecessary particles, sticks, thoroughly sort it out, rinse it in cold running water, and then rinse it with boiling water and dry it in a colander until draining of unnecessary moisture. By the way, frozen berry pies are no less tasty and aromatic. The main thing is to prepare them correctly: we lower the frozen fruits in a colander and leave them there until completely thawed. So we will keep their shape, and let the excess juice drain.

Summer berries, especially blueberries, are a storehouse of vitamins and useful elements. So why not seize the moment and use them with maximum health benefits! You can, for example, bake a delicious, light blueberry pie, the name of which we gave is “Summer”.

Ingredients:

- 50 gr. butter
- half a glass of powdered sugar
- two eggs
- vanillin to taste
- one and a half cups of fine flour
- baking powder 1.5 teaspoon.
- a pinch of salt
- a glass of milk (fat content 3.2%)
- one and a half glasses of blueberries

Cooking method:

1. Beat the butter until the air mass, pour the powder into it, without stopping whipping until the sugar dissolves. Next, add eggs to the mixture and continue to beat at a low speed mixer, and at the end pour vanilla. Mix everything and divide into two parts.

2. In a bowl, mix the flour, baking powder and a pinch of salt. Pour the flour into half a creamy egg mixture, mix and pour a glass of milk. Grind into a homogeneous mass and put into the dough the remaining half of the egg mixture. We start a thin dough. It should be very tender after baking.

Ingredients:

- 180 gr. flour
- a pinch of salt

- 3 tbsp. tablespoons of water
- five glasses of pitted cherries

- 50 gr. corn starch
- two teaspoons of oil (for filling)

Cooking method:

1. Mix flour, sugar and salt, add softened butter and three tablespoons of water. Mix everything and start a soft dough. Then we roll it into a whole ball and, wrapping it with cling film, remove it for an hour in the refrigerator.

2. After an hour, take out the dough and roll it. After that, we lubricate the round shape with oil and put the layer into it. Carefully cut the edges according to our shape. From the remnants of the dough we cut out asterisks and several strips to decorate the cake, put the figures aside for a while.

3. In one bowl, mix the flesh of a cherry with two tablespoons of lemon juice, in the other - blueberries with the remaining spoon of lemon juice. Separately, mix starch with sugar and distribute it into berries (1 cup per cherry, the rest to blueberries).

Cooking method:

1. To prepare the dough, mix all the dry ingredients, chop with soft butter, add water and knead a coarse dough. We divide it into 2 parts (the first is larger, the second is slightly smaller). We roll out most of it into a layer and put it on a greased baking sheet.

2. Mix all the dry ingredients for the filling. We wash the berry, let it drain excess moisture. Then mix blueberries with a mixture of dry ingredients and spread evenly on a layer of dough. Sprinkle with grated or chopped butter on top. We roll out the second layer of dough and close the filling with it, pinching the edges well. On the surface of the pie (in the middle) we make a small hole for the steam to escape.
