What is important for the New Year's cake? Ease of preparation and assimilation, as well as - festive decoration. With an abundance of delicious dishes on the main table, meringue cakes, jelly, cottage cheese - just right! They are not as nutritious and high-calorie as, say, butter biscuit. Ease of execution can be provided by a recipe without baking or in the style of anthill, broken glass - any recipe that does not require large time and emotional costs, such that it works for sure.

Of course, if there is no experience in decorating, then this issue will have to work more. But certain tricks will help to cope with this task: in the confectionery departments they sell colored dragees, marmalade, marshmallows, cookies with icing and many beautiful and tasty elements of the future decor for the "finest hour" of the hostess of the festive table. Homemade cottage cheese 500 g

Oil (82.5%) 150 g

Milk 100 ml

Vanillin 5 g

Powder 220 g

Wipe fat cottage cheese through a sieve, add softened butter and beat in a lush mass, adding powder (120 g), and then gelatin (10 g) dissolved in milk. Transfer to a detachable form and place in the refrigerator for solidification. The basis for the cake is ready.

Heat the juice to 90 ° C. Add agar and berries. Pour the jelly into another form, the same diameter as the form with the curd base. Put fruit jelly on the base when both masses are well cured.

Beat the chilled proteins until a stable foam is added with the remaining powder and vanilla powder. Dissolve 10 g of gelatin in 100 ml of boiled water, strain and pour into a protein cream in a thin stream, continuing to whip the mass. Immediately transfer the finished cream to a pastry bag and place it on the cake, filling out the edge and sides of the cake. Garnish with thin slices of green marmalade on top. Soak the finished cake again in the refrigerator until the protein cream has set. After an hour, the cake can be served.

2. New Year's cake: simple recipes. Fantasy cake, without baking

Products:

Meringues 500 g

Nuts (any) 200 g

Chocolate 150 g

Oil 250 g

For cream:

Milk 0.4 L

Cocoa 30 g

Sugar 180 g

Vanilla 4 g

Cognac 75 ml

Yolks 3 pcs.

Cooking Technology:

Prepare a split mold (o28 cm), grease it with oil. Line the bottom of the mold with oiled parchment. Instead of air cakes, in time-saving mode, use ready-made meringues, which are sold in the confectionery departments.

It remains to prepare the cream and collect the cake.

Pour milk into a stainless steel pan and place on the stove. Rub eggs and yolks in a deep bowl. Combine the flour with cocoa and sugar, add to warmed milk, bring to a boil, stirring continuously to avoid the formation of lumps. Combine the boiled mass with eggs, pouring the milk mixture in a thin stream and at the same time whisking the eggs with a whisk. Put custard again on the stove and bring to a boil. After cool to room temperature and beat in a bowl of the mixer with softened butter, add vanilla and cognac.

Put a layer of meringues on the bottom of the mold. Lubricate it with cream and sprinkle with crushed nuts. Again - a layer of meringues, cream, nuts. The last layer is cream. After filling out the form, put it in the refrigerator for 2-3 hours, so that the cream is well frozen. Then shift to the cake stand and proceed to decorate.

You can close the sides, if desired, with meringues or sprinkle with crushed nuts, but first you need to grease them with cream.

To decorate the surface, you need a sheet of parchment and a flat dish. On parchment, draw leaflets or other patterns that you would like to put on the surface of the cake, turn the sheet over with the back side, put on a dish. Melt the chocolate, add 50 g of butter and 25 g of cognac to it, beat with a whisk until a shiny, uniform consistency is obtained. Put the chocolate mass in a cornet or confectionery syringe. Squeeze onto the cooked sheet along the contour. It all depends on the imagination. Place the chocolate pattern in the freezer for a few minutes. Combine cocoa with sugar and add the mixture to boiling milk. It is better to steam the glaze so that the milk syrup thickens well and does not burn at the same time. Add the remaining oil, 2 g vanilla and 10 ml cognac. Stir the chocolate icing constantly with a whisk until a shine appears. Cool to room temperature, and in the meantime finish cooking the souffle cream. Dissolve the gelatin and beat the whites. In banana puree add whipped to a stable foam proteins with gelatin, strawberries. Transfer the cream to a mold on a biscuit layer. Put in the cold for 1-1.5 hours.
