Pickle without pearl barley - basic principles of preparation

Pickle can be mushroom, vegetarian, meat, and even fish. Broth for meat pickle is prepared from both meat and meat offal. For the preparation of fish broth use river or sea fish.

Basically, potatoes, carrots, cabbage and onions are used to make pickle. Some recipes use root vegetables, radish, tomatoes or turnips.

Ingredients

Cooking method

1. Rinse the meat. Boil the water, dip the meat into it, slightly salt, put the bay leaf and allspice with peas. Cook for half an hour, removing foam in time.

2. Peel, wash, and cut the potatoes into a large cube. Put in the broth. Boil for another half hour.

3. Finely chop the peeled onion, and send to the pan.

4. Grind carrots on a coarse grater, put in the broth.

5. Coarse pickles and add to pickle. Cook together for another 20 minutes.

6. Chop the cabbage finely. Finely chop the peeled garlic cloves. Put in a pan. When the contents begin to boil, add the tomato sauce and pour in the cucumber pickle. Season with salt, pepper and spices. Stew for several minutes over low heat.

7. Add chopped fresh herbs to the prepared soup. Remove from heat, cover, let it brew a little.

Recipe 2. Pickle without pearl barley and rice

Ingredients

two liters of any broth;

two small pickles;

a small cup of boiled rice;

two potatoes;

Cooking method

1. Peeled my potatoes and chop coarsely. We put it in a boiling broth and leave to cook until tender.

2. Peeled onion finely chopped. We clean the carrots. Three carrots and pickles. In a pan with heated oil, put the vegetables and fry everything until light brown. Add the grated pickles. Fill everything with a small amount of water and simmer until cooked.

3. Take the finished potatoes from the broth. Knead it with a fork in a separate bowl. Sent to the broth again. We spread the vegetable frying and boiled rice here.

Ingredients

600 g of beef brisket;

freshly ground pepper;

three potato tubers;

60 ml of vegetable oil;

one carrot;

salt;

a slice of parsley root;

300 g canned corn;

three pickles.

90 g semolina;

chicken egg.

Cooking method

1. Beef brisket, put in a pan, pour filtered water. We send to the stove. When the broth begins to boil, remove the foam. Cook over low heat for over an hour.

2. Dice peeled and washed potatoes.

3. We chop the peeled vegetables and roots. We chop the onion into cubes, chop the carrots with thin strips.

4. Pickled cucumbers finely cut.

5. Take out the prepared meat from the broth. Separate it from the bone.

6. Add the potatoes, half the carrots and onions to the broth. Cook for a quarter of an hour.

7. Heat the pan. Pour the vegetable oil and spread the remaining half of the vegetables. Cook, stirring, for three minutes over medium heat. Add chopped cucumbers and cook for another five minutes. Add tomato paste. Mix and hold on the stove for another minute.

9. Pour semolina into a plate, salt and drive in an egg, stir. It turns out the dough as thick sour cream. We spread the dough with a teaspoon in boiling pickle.

10. Cook the pickle for about five minutes, lid, over low heat. Wash and finely chop the greens. Serve by adding sour cream and greens to the plate.

Recipe 4. Lean pickle without pearl barley with mushrooms

Ingredients

three potatoes;

fresh greens;

three pickles;

seven peas of pepper;

300 g of champignons;

pepper and salt;

Cooking method

1. Peel my carrots, cut into thin strips or chop on a coarse grater. Peel and chop onions and potatoes.

5. In boiling water we spread potatoes, rice, half an onion and carrots. Cook for a quarter of an hour.

6. Heat the pan, pour the vegetable oil. Spread the remaining vegetables. Stew, stirring, over moderate heat for a couple of minutes. Then add the mushrooms and cook all together for about five minutes, stirring occasionally. Then put the tomato and cucumbers, mix.

7. Then pour a third of a glass of vegetable broth into the pan. Stew for five minutes. We spread the vegetable frying in a pan. Season with spices and put a bay leaf. Cook the pickle over the slowest fire for ten minutes. Then remove from heat and let the soup brew for 20 minutes. Add washed chopped greens.

Recipe 5. Pickle without pearl barley in Kuban

Ingredients

two pork kidneys;

ground pepper;

pork heart;

table salt;

400 g of potatoes;

half a bunch of parsley;

four pickles;

30 g of tomato paste;

a glass of cucumber pickle;

50 g of bacon;

50 g of beans;

40 g drain oil .;

100 g of onions;

garlic - three cloves.

Cooking method

1. Cut the kidneys in half and fill with drinking water, boil. After a couple of minutes, drain the water, rinse the kidneys. Repeat the operation again. Add a heart to your kidneys a second time. Boil for five minutes. Drain again, flush the kidneys and heart. Pour with fresh water, and cook on low heat for an hour and a half until cooked. You can add bay leaf and peas.

2. Soak beans in advance. Then boil until cooked.

3. Chopped peeled potatoes in a cube. Add potatoes and beans to the broth.

1. Boil two liters of broth. Peel, wash and chop the potatoes into cubes.

4. Peel onions and carrots. Chop the onion finely, chop the carrots into large chips. Crumble pickles.

5. Heat a frying pan with vegetable oil. Put the vegetables in it and fry, stirring, for three minutes. Add pickles, stir and simmer another five minutes. Put tomato paste and a meadow of flour in a pan. Keep on the stove for another minute.
