Rice in mincemeat for meatballs can be added boiled or raw. An egg, salt, pepper are also put in the mass. Products are formed by hands moistened in cold water. Make small balls.

Raw or pre-fried meatballs are laid. In soups with them you can put any products: vegetables, cereals, herbs, mushrooms, pasta. There are also no restrictions on the number and type of spices.

Vegetable soup with meatballs

The recipe for a hearty and quick soup with meatballs and vegetables. The whole process will take no more than half an hour. Immediately put a saucepan with water on the stove so as not to waste time.

Ingredients

• 0.3 kg of minced meat;

• 2 potatoes;

• 50 grams of rice;

• 1 carrot;

• 2 pieces of onion;

• spices;

• 1 egg;

• 1 tomato;

• greens and oil.

Cooking

1. The minced meat is combined with one onion, which must be cut very finely. Add the egg, spices and washed rice. You do not need to cook it. Stir well and form meatballs.

2. We fry the formed products in hot oil.

3. Transfer to a pot of boiling water. Fluids should be around 1.6 liters.

4. Run the chopped potatoes and cook for about five minutes.

5. Shred the carrots, chop one head of onion and send to the potatoes, salt the dish, leave to cook until the vegetables are soft.

6. Cut the tomato into small pieces and add to the pan. Cooking another two minutes.

7. It remains to add greens, spices to the soup and you're done!

Soup with meatballs and noodles

To prepare such a soup with meatballs, it is not necessary to use vermicelli. Other pastas are also suitable, but preferably small. But they will need to be added to the pan a little earlier.

Ingredients

• 0.4 kg of minced meat;

• 5 tablespoons of rice;

• 1 onion;

• egg;

• 100 grams of vermicelli;

• 4 potatoes;

• 40 ml of oil;

• spices and herbs;

• 1 carrot.

Cooking

1. Boil 2.5 liters of water. Add the potatoes. Peel and cut the tubers into large slices.

2. Rice cook separately in another pan, ten minutes is enough. Drain the water, add the cereal to the minced meat, put the salt and the egg, pepper and knead. We form small meatballs.

3. Heat the oil. Fry meatballs on both sides and transfer to a pan to already half-finished potatoes. Cook together, but make sure that the soup does not boil actively. Cook over moderate heat.

4. Shred the carrots into strips, cut the onion into cubes and fry together in a pan after the meatballs. If there is very little oil left, you can add a little.

5. We put the vegetables in a pan when the potatoes are already quite soft. Let the soup boil well.

6. Add the vermicelli and cook for half a minute.

7. Put the herbs, to taste the spices.

Meatball and Bean Soup

To make bean soup with meatballs, you need mixed minced meat. We take canned beans in tomato or in our juice at our discretion.

Ingredients

• 0.4 kg of minced meat;

• 0.1 kg of rice;

• 3 potatoes;

• 1 egg;

• 2 onion heads;

• 4 tablespoons of oil;

• 1 can of beans;

• 1 carrot;

• 1 bell pepper;

• greens and sour cream.

Cooking

1. Immediately boil rice. Next to another saucepan we put some water for soup, let it boil for now.

2. Combine rice with chopped onion, egg and spices, add minced meat and knead thoroughly. We form small meatballs the size of a nut.

3. Run the cooked meatballs in a pot with soup, boil for a minute.

4. Throw potatoes, cook another seven minutes.

5. We open a jar of beans. If it is in tomato sauce, then you can run into the pan all together. If the product is canned in its juice, it is better to drain the liquid. Salt the dish.

6. Fry vegetable passerovka with onion and carrots. We use any oil.

7. Cut the pepper into small cubes and add to the sauté, fry everything together.

8. We shift the passerovka with a common dish. We give a good boil.

9. Add chopped greens, a leaf of lavrushka and turn it off.

Soup with meatballs and cauliflower

For this soup, you can use fresh cauliflower or frozen. Also, from seasonal vegetables you will need a zucchini, which can be replaced with squash. We prepare minced meat for meatballs according to any recipe, in total 0.4 kg will be needed. You can use ready-made meatballs purchased at the store.

Ingredients

• 3 potatoes;

• 1 zucchini;

• 0.6 kg of cabbage;

• 1-2 carrots;

• 1 bunch of dill;

• 400 grams of meatballs;

• 1 onion;

• butter.

Cooking

1. Immediately put 2.5 liters of water, boil and start coarsely chopped potatoes.

2. From the prepared forcemeat, we form meatballs and pour the potatoes after it, salt the soup.

3. After boiling add cauliflower. Before this, the vegetable is well washed and disassembled into inflorescences. Cook potatoes with cabbage for about ten minutes.

4. Zucchini cut into cubes and add to the soup. Cook the dish until soft.

5. Fry the onion in oil, add the grated carrots and sauté until rosy.

6. We transfer the vegetable passerovka to the soup, add spices to taste, put the chopped dill and turn it off.

7. Pour the dish into plates, serve with sour cream.

Soup with meatballs "Fast cabbage soup"

It turns out that cooking cabbage soup can take a lot less time. The recipe for a simple soup with meatballs, which is prepared based on traditional cabbage soup. Similarly, you can cook borscht by adding sautéed beets to the dish.

Ingredients

• 400 grams of minced meat;

• 400 grams of cabbage;

• 0.5 cups of rice;

• 4 tablespoons of tomato paste;

• 2 onion heads;

• 1 bell pepper;

• 3 potatoes;

• 1 carrot;

• oil, herbs and spices.

Cooking

1. Knead the minced rice with meat and spices, put the onion chopped into small cubes in it. Stir and form koloboks.

2. Run the meatballs in 2 liters of boiling water, salt.

3. Add chopped potatoes and cook for seven minutes.

4. Next, put the cabbage and cook together until soft. If the cabbage is summer, it will be cooked much faster than autumn or winter varieties. Therefore, it is better to add it at the very end.

5. While the vegetables are boiling, we are preparing a dressing. To do this, we alternate in a frying pan with oil every two minutes: diced onions, shredded carrots, Bulgarian pepper. Last is tomato paste. Fry together.

6. We shift the dressing into the pan, boil the cabbage soup for a couple of minutes.

7. Put spices, add herbs. We put a lid on and off. Let stand before serving for ten minutes.

Soup with meatballs and mushrooms (champignons)

Mushrooms will be used for this soup. But similarly, you can cook the first dish with other mushrooms, including dry ones. We prepare minced meat for meatballs according to any recipe.

Ingredients

• 0.3 kg of meatballs;

• 0.3 kg of mushrooms;

• 4 potatoes;

• 1 onion head;

• 3 tablespoons of oil;

• 1 carrot;

• spices.

Cooking

1. Cut into cubes of medium-sized potatoes, run into boiling water. There should be about two liters of liquid in the saucepan.

2. We make meatballs and send to potatoes.

3. Add the carrots cut into small cubes.

4. Cut the mushrooms in any slices, you can cubes or straws, send in a skillet with butter and fry over high heat for three minutes.

5. Add the chopped onion to the mushrooms and fry until rosy.

6. Transfer the mushrooms to soup, salt and cook until the end.

Soup with meatballs and cream cheese

To prepare a saturated soup with meatballs, classic processed cheeses are required. And ordinary tinned peas will add brightness.

Ingredients

• 0.3 kg of minced meat;

• 3 tablespoons of rice;

• 1 small egg;

• 5 tablespoons peas;

• 2 potatoes;

• 2 curds;

• 1 carrot;

• 2 tablespoons butter;

• 1 onion.

Cooking

1. Stir minced meat with raw rice and egg, salt and roll up small meatballs.

2. Bring any broth or just water to a boil. We launch meatballs.

3. After boiling add potatoes. We cut into pieces of any shape, but small in size. Salt the dish.

4. In a frying pan, fry onions and carrots with butter.

5. We shift the vegetables into an almost ready soup, add green peas and cook for another minute.

6. Add the processed cheese, which must be cut or grated, boil until they dissolve. Done!

Soup with meatballs - useful tips and tricks

• Stuffing for meatballs turned out to be weak and spreads? You can add semolina to it, and then let it stand so that it swells. If there is no semolina, then you can also mix a little breadcrumbs that perfectly absorb excess moisture.

• If the meatballs are cooked a little, then one egg may be too many. As a result, the mass will be liquid. It is better to immediately separate half, and send the remainder to some other dish.

• Not only salt and pepper can be added to meatballs. They are good friends with herbs, paprika, garlic, hops, suneli.

• The bay leaf added to the soup must be removed from the pan after half an hour. Otherwise, the dish will be bitter and get an unpleasant aftertaste.

• To make the meatballs smooth and neat, minced meat must be well beaten on the table before forming. And when sculpting the balls, the hands are moistened with cold water.

• Salt the first dishes in the middle of cooking or at the very end, but this does not apply to soup with meatballs. It can be seasoned immediately after launching the meat balls into the broth. Salt will prevent meatballs from falling apart and help maintain shape.
